What is the environmental fee?

We are working to promote more sustainable restaurant practices in the city and restaurant industry. We have done this by introducing processes such as using an ORCA bio-digester, recycling our oil, and growing microgreens in-house. However, because these practices are not mainstream, they can be costly. The 3% goes directly to maintaining these programs as well as towards implementing new projects. More information can be found here.
